• Feta cheese – 1 block per person if using as a main, or a block cut into quarters if using as a side
  • 1 small onion
  • 1 tomato
  • Olive oil
  • Basil leaves
  • Fresh ground black pepper
  1. Cut 4 squares of tin foil at least 20x20cm
  2. Slice the onion into 8 slices and place one slice on the middle of each square of foil
  3. Place the feta on top of the onion, then put another slice of onion on top
  4. Cut the tomato into slices and place on top of the onion
  5. Place 3 or 4 basil leaves on top and drizzle a tablespoon of olive oil over the top of everything
  6. Bring the sides of the foil up and close tightly
  7. Bake in the over at 200c for 30 minutes
  8. Serve hot
