
- Feta cheese – 1 block per person if using as a main, or a block cut into quarters if using as a side
- 1 small onion
- 1 tomato
- Olive oil
- Basil leaves
- Fresh ground black pepper
- Cut 4 squares of tin foil at least 20x20cm
- Slice the onion into 8 slices and place one slice on the middle of each square of foil
- Place the feta on top of the onion, then put another slice of onion on top
- Cut the tomato into slices and place on top of the onion
- Place 3 or 4 basil leaves on top and drizzle a tablespoon of olive oil over the top of everything
- Bring the sides of the foil up and close tightly
- Bake in the over at 200c for 30 minutes
- Serve hot
