
- Large bunch of fresh basil
- 100g pine nuts
- 100g parmesan
- 150ml olive oil
- Lightly toast the pine nuts in a frying pan, with no oil, over a medium heat, stirring occasionally until they have browned
- Add all of the ingredients to a blender and blitz for a couple of seconds until well mixed
- Add more oil, blend for longer, add some salt and pepper or lemon juice until it’s the way you like it
