• 750g potatoes
  • 6 eggs
  • 1 onion, finely copped
  • salt and pepper
  1. Boil the potatoes for 5 minutes, then cool under running cold water
  2. In a small rounded frying pan toast a teaspoon of cracked black pepper, then add some olive oil and lightly cook the onions
  3. Move onions to a plate
  4. Cut the cooled potatoes into thin slices
  5. Whisk the eggs well with a little salt and pour a small amount into the frying pan
  6. Add a layer of potatoes, a layer of onions, top up with more egg and repeat, ending with a layer of potatoes on top covered using the remaining egg
  7. Slowly cook using the lowest flame for 10 minutes or until the top has dried out a little
  8. Place the frying pan under the grill on a medium heat until completely cooked (if your frying pan has a plastic handle, wrap it loosely in tinfoil first
  9. Serve hot or cold

Add red peppers or spinach by chopping into small pieces and lightly cooking first to remove most of the moisture
