
- 1 medium courgette
- 200g cashew nuts
- 2 cloves of garlic
- 100ml olive oil
- tsp salt
- Grate the courgette and squeeze out as much of the liquid as you can
- Add all of the ingredients to a food processor and blend for a couple of seconds until mixed
- Blend for longer, add more oil or some black pepper or lemon juice until it’s to your liking
