• 1 medium courgette
  • 200g cashew nuts
  • 2 cloves of garlic
  • 100ml olive oil
  • tsp salt
  1. Grate the courgette and squeeze out as much of the liquid as you can
  2. Add all of the ingredients to a food processor and blend for a couple of seconds until mixed
  3. Blend for longer, add more oil or some black pepper or lemon juice until it’s to your liking
