
- 300g plain flour
- about 250ml buttermilk
- 2 tsp bicarbonate of soda
- 1 tsp salt
- Mix the flour, sat and bicarbonate of soda in a large bowl
- While mixing, add just enough milk to bring the mix together in a wet ball
- Tip the ball out onto a lightly floured surface, sprinkle more flour on top, and shape into a flat disk about 3cms tall
- Line the bottom of a heavy saucepan or griddle with flour and place over a low heat
- Cut the disk into quarters and place on the pan/griddle and slowly cook, turning every 5 minutes, until the edges are dry and the tops and bottoms have turned golden
- Serve hot from the pan, or cut in half and toasted, with loads of butter
