• 300g plain flour
  • about 250ml buttermilk
  • 2 tsp bicarbonate of soda
  • 1 tsp salt
  1. Mix the flour, sat and bicarbonate of soda in a large bowl
  2. While mixing, add just enough milk to bring the mix together in a wet ball
  3. Tip the ball out onto a lightly floured surface, sprinkle more flour on top, and shape into a flat disk about 3cms tall
  4. Line the bottom of a heavy saucepan or griddle with flour and place over a low heat
  5. Cut the disk into quarters and place on the pan/griddle and slowly cook, turning every 5 minutes, until the edges are dry and the tops and bottoms have turned golden
  6. Serve hot from the pan, or cut in half and toasted, with loads of butter
